Easy Peasey Banana Muffins

When life (or poor planning) gives you an abundance of ripe bananas, what do you do?  Why, you make these simple banana muffins!
The good news…these are super simple, can be mixed in a blender, don’t require any fancy ingredients, and are gluten free. From start to finish, you’ll have muffins in less then 25 mins (including bake time!) I find these make a great snack or part of a healthy breakfast.

To make 1 dozen muffins:
Preheat oven to 350 degrees. Line or grease muffin tins

You’ll need:
In a blender or food processor add:
3 med ripe bananas
1/2c plain Greek yogurt (we only had lime on hand and I used that – worked great, so I imagine other fruit flavors, or even chocolate, would be good, too)
2 eggs
1tsp vanilla extract
1/2c  maple syrup (could sub light brown sugar here)
2 1/2 c rolled oats
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 kosher salt

1 tsp cinnamon (optional)
Also Optional: semi sweet chocolate chips, raisins or walnuts

Save one 1 banana for sliced topping

Blend everything but chips/walnuts and reserved banana in a blender until fully mixed. Stir in chips or walnuts. Pour into lined baking cups and top with a slice of banana. Bake for 18-20 mins. Enjoy!

These are NOT super sweet at all…so if you like ’em sweet, adjust/add sweetener.
