MPM – April 6th

*cough* Hey there! *cough*   This week’s MPM finds me terribly under the weather.  Just last week I was thinking how fortunate I was that I had escaped catching one of the nasty bugs that had been going around this past winter, and then – BAM! – I get knocked on my butt by a doozy.  What can you do?  It’s rest and fluids for me right now, my friends!

My first pick this week is my absolute favorite soup when I am sick. (Or not!)  I love Thai style Hot and Sour soup, and while this isn’t exactly the same thing, the spices and heat from the ginger and peppers in this soup really help to ease a sore throat and clear those sinuses out.

Ginger Zucchini Noodle Soup

What you’ll need:

1TB coconut oil

1 bunch green onions, chopped

1 ea stalk of celery and 1 medium carrot, diced

1/2 red bell pepper, chopped

Garlic (2-3 cloves – or more, depending on how much you love garlic)

Fresh ginger, peeled; about a 1 inch piece grated

2 cubes of no meat Bouillon (chicken can be used if you are not a vegetarian)  I recommend bouillon over broth for a richer flavor)  I use: 20150406_144133

Soy Sauce or Tamari; 2-3TB or to taste

5-6 cups water

1 medium zucchini, spiralized (if you are in the market for a spiralizer, I recommend This one

2 eggs, beaten (can exclude if you want to keep this vegan)

Salt, pepper,  and red pepper flakes (to taste)

In a saucepan over medium/high heat, add coconut oil, green onions, garlic, ginger, carrots, celery, red pepper and pepper.  Allow to cook for 3-5 mins.  Add soy sauce.  Stir to combine.  Add boullion cubes and water, bring to a boil.  At this point, test broth to determine if you’d like to add more soy sauce, pepper, salt or pepper flakes.  Depending on which brand of boullion or broth you use, it could already be quite salty already (disclaimer – I like a lot of salt!).  Once broth taste is to your liking, add spiralized zucchini; cook for 3-5 mins.  Once broth is back to a boil, add beaten eggs while stirring soup in one direction to make an egg drop quality to the soup.  Cook for 2-3 more mins.  Serve and enjoy!

Mini  Bands – I get mine from Perform Better.  The best little tool I’ve found for monster band/lateral band work for hips, at a great price.  Small, packable, and effective!  For most folks, I recommend the blue band.
